Rehovot Winery Rehovot, founded in 1890, was originally a colony of vineyards.
As the first vintage approached, the founders of Rehovot, after much deliberation, deviated from the principle of independence, according to which they wanted to manage their lives and turned to Baron Rothschild to get their grapes for the winery in Rishon Lezion. In return, they founded the "Carmel" company to market the wines of the Baron Wineries in the Diaspora.

In 1907, a winepress was built in Rehovot to squeeze the grapes. The must was moved after fermentation to Rishon Lezion. (The winepress building stood on the higher level, south of the building where we stand, and was destroyed during the preparation of the area for construction).
"... with one foot they stand on the shelf of the machine and with the other on the cart. They spread strong arms to the cart, lift out of it a load of laden baskets, and empty them into the mouth of the hungry mill. Their bodies steam and drip sweat.

"We went up the ladder, each on his own barrel. And there he seemed to enter a different world, a world separate from the noise of the winery. The barrel heads were in the darkness under the roof. In front of each barrel stood a lone man, stirring his stick inside the barrel. Like a wanderer in the desert leaning on a stick that has sunk in the sand. Please see the painting. "

The winemakers of Rehovot have not given up on their dream that the wine production process will be done entirely in Rehovot. In 1921, several ponds were built in the cellar to hold the wine. In 1923, the large concrete tanks (the "amphorae") were built by the "Solel Boneh" company founded in the same year (on some of them the old symbol can be seen).
