Daily life in the Land of Israel in ancient times 1137/5000
The agricultural installations displayed in the garden reflect part of the material culture of the Land of Israel in antiquity. The exhibition focuses on the production of olive oil and wine - from the main production industries in the ancient agriculture of Israel.
Olive oil The olive grows wild in the natural forest of Israel. During the fourth millennium, the tree was cultivated, and since then it has occupied a central place in the economy of the countrys inhabitants. The fruit of the olive tree and the oil extracted from it were originally used as a food source. Over time, olive oil was also used for lighting, cosmetics and medicine.
Olive oil production was done in two main stages: crushing the olives, and pressing the puree to extract the liquid (mohel - a mixture of oil and water).
The wine The volume of wine production in previous periods in Israel was large, as evidenced by the remains of the many Winepresses that were exposed in Israel. Most Winepresses are carved in the rock, so it is difficult to determine their date and duration of use. There are two stages in wine production: Grape Stepping, squeezing the grape remnants (glazes and pits). The simple winepress consists of a sloping treading surface on which the grapes were pressed, and next to it but lower than it, a collecting vat, into which the must flowed and where the initial fermentation took place. In more complex wineries there were also cisterns for filtering or settling, additional surfaces for laying the grapes before treading and a press with which they produced the must that remained in the glazes after treading.
